The totality of the features and characteristics of a product that bear on its ability to satisfy a given Need. In the case of a fishery product, quality is the aggregate of the properties that influence the acceptability of the product for the consumer. These properties are predominately the particular properties that influence the sensory properties of the product - appearance, flavour/odour, texture.
