red creamer potatoes

Most red creamer potatoes are the Early Rose cultivar, which became the most widely grown potato in America in the 19th century, cultivated for its vigorous growing abilities, high yields, excellent quality and resistance to late potato blight. The Early Rose potato is the pedigree of the Garnet Chili potato which is a parent plant to over 150 different potato varieties, including the Russet.

Red creamer potatoes are the young immature potato of the common red potato. They are rounded and generally one inch in diameter. The skin is thin, ruby red in color and high in moisture content. The flesh is crisp, waxy and as its name suggests, creamy in both texture and flavor. It is not uncommon for creamer potatoes to have indentations in their flesh, as there age reflects their tenderness.

Nutritional Value

The predominant form of nutrition that the red potato provides is carbohydrates. Regardless of speculation, the flesh and the skin contain equal amounts of nutrition.

Serving Ideas

Red potatoes' flavor and texture lend themselves best to boiling and roasting applications. They absorb accompanying flavors well and offer a textural element in a variety of dishes both cold and hot. Red potatoes are considered a quintessential salad potato. As this is a root vegetable, it should be washed thoroughly before preparing. Store in a cool dry place.

Geography/History

The potato is an important economic crop for countries throughout the world. Its perishability rate though makes it largely under-traded internationally. Regardless, its presence is still international. In 2008 the potato was named "International Year of the Potato", a nod to its thousands of varieties' accessibility to all social classes in nearly every culture.
