bluefin tuna

A fish commonly found in warm oceans.

Note: Bluefin Tuna is among the largest tuna (Thunnus thynnus). It has bright red flesh, and is a principal game and food fish on the planet.

Bluefin tuna is one of the most flavourful and sought after fish on the planet. Once its flavour was discovered by chefs, it became highly sought after. The increased popularity of sushi in Japan and around the world over the last fifty years, has therefore had a direct impact on its population. This very large fish, which has the potential to live up to 30 years and grow to weigh as much as a ton, plays a seminal role in the ocean’s ecosystem. The systematic fishing of this particular tuna has caused a shift in the ecosystem, as one of its predators is used for consumption before ever being able to reproduce. Despite being placed on the endangered species list, the Bluefin is still being fished. The shortage of supply has caused prices to soar, some Bluefin are auctioned off for hundreds of thousands of dollars. The cost is felt at the table too, because only the highest end sushi restaurants will offer what is now considered a delicacy. It is an unfortunate consequence to a world-wide appreciation of a foreign style of food - that such a splendid fish should disappear for our enjoyment.
