Recipes vary between regions and families, often incorporating differences in coating (flour, breadcrumbs, batter) and seasoning (cinnamon, red pepper, etc.). While attacked for unhealthy fat (and dehumanizing processing) and denatured in fast-food chains worldwide, fried chicken remains a symbol and delight of the South.
