marbling
Intramuscular fat distributed in the muscle of cattle. The USDA appraises marbling in the rib-eye between the 12th and 13th rib and it's appraisal is a large determining factor of grading. Cattle can be fed grains to increase marbling, but this may lead to an increase of acidity in the blood called acidosis.
