Black trumpet mushrooms (scientific name Craterellus fallax) are an edible mushroom also known as Horn of Plenty and Trumpet of Death. Although related to the Chanterelle, black trumpet mushrooms should not be confused with the Black Chanterelle which produces visible veins. Black trumpet mushrooms are called the "poor man's truffle" in France because of their similar dark color. They are a true wild mushroom as they have resisted all attempts to be domestically cultivated.

Black trumpet mushrooms' given name suggests their shape, albeit their shape is more interpretive, often appearing more like a frail flower. The mushrooms have a waxy charcoal-gray exterior and a deep brown, near black flesh. The cap blends fluidly into the stem, both edible and equal in texture and flavor. Black trumpets have a soft yet chewy texture and a rich, buttery, woodsy flavor with a sweet aroma. They are harvested between two and three inches in length.

Serving Ideas

Black trumpet mushrooms pair well in egg preparations or in dairy based sauces. Black trumpet mushrooms flavor compliments that of peppers, fish, game, pheasant or venison, horseradish and fresh herbs. Sauté and season simply, and serve as an easy side dish. Maintaining its texture and flavor, this mushroom is ideal for drying. To store, refrigerate fresh mushrooms in a paper bag or between damp paper towels. Do not seal in plastic.

Geography/History

The black trumpet mushroom is native to deciduous forests of Europe. They grow wild in any similar environment where there is tree cover above and a leafy carpet on the forest floor. Black trumpets prefer rainy damp elements and will even tolerate some snow. Because of this, they thrive along the West Coast from Northern California to Oregon and can also be found growing on the East Coast and in France during the summer and fall. The black trumpet is one of the most difficult mushrooms to find as they do not typically grow at the base of trees. Their inconspicuous color provides a natural camouflage among the leaves and sticks of the forest, often hiding their existence.

Seasons/Availability

West Coast black trumpet mushrooms prefer growing under hard wood in cool weather and are available from November to April or May. European black trumpets are available during summer months into the fall season.
