Black Trumpet mushrooms (scientific name Craterellus fallax) are an edible wild mushroom also known as Horn of Plenty, Trumpet of Death and black chanterelle. Although related to the chanterelle, Black Trumpet mushrooms should not be confused with the Black Chanterelle which produces visible veins. Black Trumpet mushrooms are called the "poor man's truffle" in France because of their similar dark color. They are a true wild mushroom as they have resisted attempts to be domestically cultivated.

Dried black trumpet mushrooms age gracefully, holding their original flavors and scent quite well. They are brittle fleshed and their aromatics are fruity and woodsy. Once they are reconstituted they reveal their namesake, trumpet-shaped with a charcoal gray color, fragile velvety texture, sweet stone fruit aromas and rich buttery flavor.

Serving Ideas

Dried black trumpet mushrooms may be reconstituted and used in place of fresh black trumpets. Black trumpet mushrooms pair well in egg preparations or in dairy based sauces. Black trumpet flavor compliments that of peppers, fish, game, pheasant or venison, horseradish and fresh herbs. Sauté and season simply, and serve as an easy side dish. Maintaining its texture and flavor, this mushroom is ideal for drying.

Ethnic/Cultural Info

In France the Black Trumpet is sometimes referred to as "la viande des pauvres" meaning "poor people's meat", as it has sustained populations during hard economic times.

Geography/History

Black trumpets grow throughout temperate zoned regions within the Northern hemisphere and southeastern Australia. Their fruiting season is from summer through early winter. They can be found growing in wet depressions, decaying forest floors, even puddles. However, they discreetly blend in with their surroundings making them a tough mushroom to hunt.
