white acorn squash

The white acorn squash, scientifically known as Cucurbita pepo is a member of the Cucurbitaceae family along with pumpkins and zucchini. All squash can be categorized as either winter or summer varieties. The white acorn squash is a winter variety, however like summer squash it is grown in the warm summer months. Its classification as a winter squash is a result of its hard skin which makes it excellent for winter storage.

Encased in hard, white, inedible skin, the pale yellowish-gold flesh of the white acorn squash is mild and sweet, with a smooth, delicate texture. Somewhat ovoid-shaped and pointed at the bottom, acorn squash is easily recognized by its thick, characteristic, longitudinal ridges which give it the appearance of its namesake.

Nutritional Value

White acorn squash provides vitamin C, vitamin B6, complex carbohydrates, potassium, magnesium, folate, thiamine and dietary fiber.

Serving Ideas

White acorn squash is ideal for use in sweet preparations but can be utilized in a variety of savory dishes as well. They can be roasted, broiled, grilled or baked. Cooked squash may be pureed and added to soups, stews, risotto, cakes or other baked goods. When halved and stuffed it is the perfect size for an individual serving. Its flavor and texture is complemented by citrus, apple, honey, maple syrup, cinnamon, chili powder, robust cheeses, fresh herbs, butter, bacon, brown or black rice, dried berries and sausage.

Geography/History

While the traditional Green acorn squash has been around for nearly 10,000 years the white acorn squash is a fairly new variety that was developed in the 1980's by squash expert Glenn Drowns. This variety of acorn squash is rare and most commonly found at farmers markets or from specialty produce distributors. Known as a “bush acorn” variety the white acorn squash is also a popular garden squash since its fruits grow on a compact bush.

Seasons/Availability

White acorn squash has peak season during the fall and winter months.
