Riba je prirodno osjetljiva, zahtijeva kratko vrijeme kuhanja na visokoj temperaturi. Potrebno je 10 minuta kuhanja po inču (oko 2,5 cm) debljine (na najdebljem dijelu) za svježu ribu, 10 minuta po inču za smrznutu ribu.
