anno imo potatoes
Anno imo, also known as annoimo and anno, are a variety of Japanese sweet potato and a member of the Convolvulaceae family. Currently, sweet potatoes registered and sold as anno imo are only approved for growing in Tanegashima, however farmers will be able to cultivate them outside of Tanegashima beginning in 2014.
The anno imo has a tough reddish-brown hued skin which encases a pale orange flesh. When cooked it's flesh becomes moist and creamy. The anno imo is known for its exceptionally sweet flesh and contains nearly twice the sugar content of a traditional Japanese sweet potato (Satsuma). Anno imo can be round to slender in size and form, the sweetest ones being those with a plump and rounded shape. The sugar content of the anno imo will be at it's peak of flavor three weeks to a month after they are harvested.
Nutritional Value
The anno imo is rich in dietary fiber and immune boosting vitamin C. It also contains a significant amount of potassium and vitamin E.
Serving Ideas
Anno imo can be used in a variety of different sweet and savory preparations as result of it's high sugar and starch content. Baking and roasting will enhance it's naturally sweet flavor. Puree and add to soups, stews, custards, tarts and baked goods. Bake and stuff with a variety of different fillings. Slice into wedges and roast or fry. Their sweet flavor pairs well with butter, honey, walnuts, lime, chives, curry and warm spices such as cinnamon, nutmeg, cumin and clove.
Ethnic/Cultural Info
Many Japanese believe that only soil and climate in Tanegashima can produce the rich and sweet taste anno imo is known for. In the cold winter months, food trucks and carts known as ishi-yakiimo and yaki imo can be found on the streets of Japan selling stone baked sweet potatoes such as the anno imo.
Geography/History
After WWII Japanese soldiers returning home to Tanegashima brought with them sweet potatoes from Sumatra. The name, Anno came from Anno district in Tanegashima where local farmers experimented with growing anno imo for the first time. In order to be sold under the anno imo name potatoes must be grown in Tanegashima under strict cultivation guidelines and are inspected for flavor and sugar content prior to being released to the marketplace. Anno imo were officially added to the registry of breeds in 1998.
Seasons/Availability
Anno imo are available in the fall and winter months.
