Blue lake beans are a bush type snap bean that was developed from the blue lake Pole bean. Since the mid-20th century, the blue lake bean has been considered the benchmark standard of green beans. Despite its origins as a canning bean, through continued development, it has evolved into a gourmet bean variety. Within the late 20th century, the blue lake bean had surpassed the Kentucky Wonder to be recognized as the premier gourmet bean. The signature blue lake bean is known in seed catalogs as blue lake 274 - the cultivar that made the blue lake bean famous.

Blue lake beans have a dark green, cylindrical, stringless, firm, and plump pod. The pod contains tiny pale green to white edible seeds. The bean's flavor is distinctively mild, subtly grassy and sweet, with a crisp-tender texture. Blue lake beans produce an abundant crop of pods that can reach 6 to 7 inches in length.

Serving Ideas

Blue lake beans are a mild and versatile vegetable. They can be served whole or sliced in both cooked and raw preparations. Add whole or halved to salads, saute or steam with other vegetables or chop and mix into quiche, curry and casseroles. Blue lake beans are also perfect for quick pickling or canning. Their flavor pairs well with fresh herbs, citrus, nuts, raisins, hard cheeses, lemon, tomatoes and summer squash.

Geography/History

Blue lake beans received their given name as they were originally cultivated in the early part of the 20th century in the blue lake District near Ukiah, California. They were brought to Oregon in 1923 where they were extensively researched, resulting in the development of the new string-less bean varieties. The first commercial stringless blue lake bean variety was developed by Asgrow Company in 1962. There are dozens of hybrids and sub-varieties that represent the original blue lake bean with better yields, disease resistance and adaptability to multiple climates. One blue lake bush bean plant can provide multiple harvests over an entire growing season.
