The purple fingerling potato, botanical name Solanum andigenum, also known as Purple Peruvian fingerling, is an heirloom variety that is most often found in farmers markets, though it has incredible storage qualities. All cultivated potatoes belong to one botanical species, Solanum tuberosum. There are thousands of varieties of potatoes, of which dozens of purple potato varieties are cultivated today.
Purple fingerling potatoes are petit in length, roughly tubular with rounded ends. They have a vivid deep violet ink-colored smooth skin and flesh. Their flesh has a creamy waxy texture and a rich flavor to match their bold appearance. The entire potato is edible.
Nutritional Value
The purple fingerling potato's striking pigment is its nutritional life force, thanks to the antioxidant powerhouse anthocyanin, which is responsible for the purple and blue color of fruits and vegetables. This flavonoid has been shown in studies to possess anti-cancer and heart-protective effects, as well as benefits like boosting the immune system and protecting against age-related memory loss. Though, Peruvian in origin, the purple fingerling potato can be utilized in any cuisine that would otherwise use potatoes. Purple fingerling potatoes can be roasted, braised, boiled, baked, fried for chips, and even confit'd. They pair well with savory herbs, garlic, pork, poultry, artichokes, both rich and mild cheese, other starchy vegetables such as corn and shelled beans and of course, salad greens.
Geography/History
The purple fingerling potato is not unique in its place of origin. In Peru, it is one of 3000 varieties that have been cultivated by farmers for centuries. The Purple potato specifically may have been developed from a wild species that has inherent disease, pest, bacterial and frost resistance characteristics, thus its ability to survive and evolve as a 21st century crop. Though they may not have the obvious significance as the Russet or yukon gold, genetic distribution and research places the purple potato as one of the very first potatoes ever cultivated and currently, one of the most popular potatoes worldwide.
