Red thumb fingerling potatoes are one of hundreds of varieties of red potatoes. Their fingerling status simply defines them as a small potato variety. They are late-season heirloom variety that is highly regarded for their uniform size, disease resistance and storage qualities.

The red thumb fingerling potato is defined primarily by its shape, size and texture. Measuring about two to three inches in length and tubular in shape, its given name suggests it has the appearance of a thumb. The skin of the red thumb fingerling potato is ruby hued and semi smooth. Its flesh, marbled with pink and creamy white coloring, is waxy and firm. This is a trademark texture of nearly all red potato varieties.

Serving Ideas

The red thumb fingerling potato is considered best for roasting and grilling, though it can also be boiled and fried. It is not recommended to eat the potato raw, but the entire potato is edible. Store in a cool dry location. Do not refrigerate raw potatoes.

Geography/History

The first Red potato to be cultivated originated in Peru. Its lifeline is thousands of years deep. Having hundreds of varieties to rely on for culinary purposes has allowed Red potatoes to adapt to different growing conditions throughout centuries. Hybrid varieties of Red potatoes, including Red Thumb have been created to improve upon their wild ancestors' ability to survive.
