The yellow eight ball squash are a hybrid summer squash variety, with a round shape. With their bright yellow color, they are sometimes called a one ball squash due to their similarity to the one ball in billiards.

The yellow eight ball squash is similar in color and taste to the longer, yellow straight neck squash. It has a mild creamy white flesh and a bright yellow skin. They generally range in size from one to four inches in diameter. The smaller sizes will be the most flavorful and tender, while the larger sizes are firmer. If the squash gets much larger than four inches, the seeds will get hard and the flesh woody.

Serving Ideas

The yellow eight ball squash can be roasted whole or scooped out and stuffed with a variety of fillings. The flavor pairs well with corn, sausage, tomato, pasta, herbs and cheeses. They are excellent sliced in to perfect circles for squash parmesan or for simple frying or sautéing. Mix with the Green or White variants of the eight ball squash for a unique presentation. Alternate slices for an attractive zucchini tart.
