There are hundreds of yellow potato varieties. Unless genetically tested, singling out which variety a yellow creamer potato may be is nearly impossible. All potatoes have been crossbred for centuries. Farmers choose varieties that best suit their climate, soil as well as varieties that work well with other crops, create high yields and resist disease.

The yellow creamer potato is a young immature yellow potato, harvested early for its tenderness and petit size. Its skin is thin, moist and buff in color. Its flesh is creamy yellow with a waxy texture. When cooked it becomes creamy in both flavor and texture.

The predominant form of nutrition that the yellow creamer potato provides is carbohydrates. Regardless of speculation, the flesh and the skin contain equal amounts of nutrition.

Geography/History

The potato is an important economic crop for countries throughout the world. Its perishability rate though makes it largely under traded internationally. Regardless, its presence is still international. The International Year of the Potato was proclaimed in 2008, a nod to its thousands of varieties' accessibility to all social classes in nearly every culture.

Yellow creamer potatoes are available most of the year with gap occurring in late summer.
