The process of slowly melting chocolate so that it maintains its same smooth and shiny appearance as well as its original taste when it has set. It increases the chocolate’s resistance to heat so that it does not melt when handled. It also prolongs Its shelf life. It is a key technique for creating high quality chocolates. There are two methods that a Chocolatier can use to temper their chocolate. Regular tempering which entails melting chocolate either through direct heat or indirect heat then covering the creation with it. There is also seeding which most professional Chocolatiers use. It consists of melting part of the required chocolate then gradually adding the un-melted remainder to prevent the chocolate from overheating.
